My Love Affair With Chocolate Chip Mini Muffins

You know of my love affair with chocolate and everything that has chocolate, so you understand how I could have eaten a million store bought chocolate muffins when I was in high school and didn’t know any better.

I mean they were chocolate muffins! Who was I to say no, right?

They were sweet, convenient, and delicious. Sure they were full of sugar and god knows what else, but heck. I’m just glad that part of my life is over and done with!

And happy that I’ve found ways to carry on eating the chocolate muffins, so to speak, without filling my body of harmful ingredients.

Of course, my toxic love affair with store bought chocolate muffins has stopped. I’m now in a newly healthy and glowing relationship with my low carb choc chip muffins.

My keto muffins are still sweet, delicious and convenient, but they’re in no way harmful to my body.

Why Do I Do Keto?

My journey to self-love has taught me to value everything about me, and that includes my body. I love my body. And I want it to be healthier.

I don’t aspire to be thin like runway models, I don’t see health in that anymore. I want to be fit, strong and healthy by giving my body the nutrients it needs.

This is why I’m on keto. I didn’t do it because of peer pressure, or bandwagon.

I did it for me. And I knew I could make it work better if I wasn’t constantly thinking about eating a ton of my favorite, unhealthy food.

Obsessing about them while avoiding them can only work so much.

My solution was to make my own keto version of my favorite sweets.

As my toughest critic I decided to embark on a journey to making everything taste just as good as I remember, I just couldn’t compromise on the flavor.

So I didn’t. Instead of listening to other people put limits on my abilities, I listened to myself, and tested my own limits.

Luckily for me, I did it in this day and age of advancement. I had the usual roadblocks, of course but I didn’t let it stop me. I persevered.

And if at the end of the line, all I have are these ketogenic muffin recipes? I have to say I succeeded! They are perfectly moist and full of chocolate!

To me, life is supposed to be lived. And we can’t live properly unless we’re able to deal with the challenges that come with adulthood.

So we get up, and go on. And if along the way, life tosses us another challenge, we find a way to make everything work out.

  • Muffin Pan

Ingredients
  

  • 3 egg yolks and whites divided
  • 1 cup sour cream
  • 1/2 cup monkfruit sweetener
  • 2 cups almond flour
  • 1/4 tsp salt
  • 1/2 tsp rice vinegar or apple cider vineggar
  • 1/4 tsp xantham gum
  • 2 tsp baking powder
  • 1 cup ChocZero Milk Chocolate Chips
  • 2 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F. Line or grease a muffin tray.
  • Whisk together in a medium bowl 2 cups of almond flour, 1/4 tsp of xanthan gum, 2 teaspoons of baking powder, and 1/4 tsp of salt. Set aside.
  • Beat 3 egg whites until soft peaks form and set aside.
  • Add 3 egg yolks and 1/2 a cup of monkfruit sweetener to a large bowl and beat with an electric mixer on medium speed until pale and fluffy, 2-3 minutes.
  • Incorporate 2 teaspoons of vanilla extract, 1/2 a tsp of rice or apple cider vinegar, and 1 cup of sour cream. Add flour mixture slowly until well incorporated.
  • Fold egg whites little by little very gently with a rubber spatula into the batter.
  • Add 1 cup of ChocZero milk chocolate chips and mix it gently. Spoon batter onto the prepared muffin tray.
  • Bake for 30 minutes or until lightly golden.
  • Allow to cool for 20 minutes in the pan before removing, and cool completely in a rack.

Notes

Make these keto muffins feel fresh even days after baking by placing them in the microwave for 15 seconds before eating.
