Baked keto mozzarella sticks are just what you need in your life! They’re healthy, flavorful with a spicy kick and a cheese pull to die for.

I remember eating my first mozzarella stick in a Puerto Rican McDonalds. And honestly after that, I ordered a serving of mozzarella sticks in every Puerto Rican McDonalds I went to after that.

Yes, it became an instant favorite. In fact, I liked it so much that I once ordered the same in an American McDonalds. Hah. That was a moment!

I recall the server being so politely incredulous at my order that I had to resist the temptation to cover my face.

I was new to the states then, so everything I did made me feel shy and somehow wrongfooted.

So yes. It was my favorite in the world. And I thought everything in Puerto Rico must be in the US! How very wrong I was, indeed.

I have, since then, stopped ordering mozzarella sticks at McDonalds. Well to be honest, ever since I started with keto, I no longer set foot in a McDonalds.

Now that I have learned how to make my own keto fried cheese sticks, I don’t have to rely on fast food to satisfy my cravings.

Especially since my keto fried cheese sticks are always so fresh and made with all my favorite spices!

The Added Spice!

I found these delicious Flock Hot Chicken Skin Chips and I immediately thought about adding them to my keto mozzarella stick coating. They’re spicy and add a much needed complexity of flavor to this almond flour mix.

Once I added them to this recipe I knew I struck gold. Everyone loved these at my family dinner and they were gone in seconds.

My gluten free mozzarella sticks baked with absolute love make me feel at peace with the world, and at the same time, excited about all the spices I get to incorporate, as well as that amazing texture.

Now that I have my own gluten free mozzarella sticks baked to perfection, I can rest assured that I have created delicious keto mozzarella sticks.

And I rest in the knowledge that I will not be procuring, or eating mozzarella sticks from stores, or Puerto Rican McDonalds, for that matter.

A Marinara Companion

These baked mozzarella sticks are delicious on their own but we can’t have mozzarella sticks without its ride or die companion, the best low carb marinara sauce.

I often get questions on how my marinara is considered keto and the answer is: I use the lowest carb crushed tomato sauce I can find!

This marinara companion is seasoned with salt, basil, and oregano. Those three simple seasonings make it stand out and compliment the gluten free mozzarella sticks baked with absolute precision.

Whereas before, I fried them, I decided to bake them to eliminate the greasiness of the mozzarella sticks. Once I started baking them it just became a regular in my house.

It’s just so easy to put them in the freezer and then pop them in the oven that there’s no way I wouldn’t be making these baked keto mozzarella sticks multiple times a week!

These sticks will always win in a straight up competition. To be perfectly honest, there is no competition.

The process of making these lovelies has never failed to put me in a positive frame of mind. I love having control of how much spices I put in, and the method of cooking the sticks (baked over fried).

It relaxes me. I’m not sure why. It may be because they’re so easy to make that I feel secure in the knowledge that this is something that I will never get wrong (knock on wood).

I have messed up before, but not with this mozzarella stick recipe, not after I’ve put the effort of making the instructions as clear as possible.

3 Things To Get it Perfect Every Time!

There’s 3 crucial things to keep in mind when making this recipe:

1. The chicken crumbs must be crushed into small pieces. You can also use a food processor to grind it up even more. It’ll stick better to the cheese if all the ingredients have the same consistency.

2. Freeze the coated sticks for at least 3 hours. Freezing the sticks will help with the final shape. If the cheese is not frozen, you’ll end up with a blob of cheese in the pan.

3. Do not overbake. The coating should get a little golden but if they’re in the oven for too long, your cheese will melt and become flat. If you see some of the baked mozzarella sticks starting to get flat, take them all out immediately.

This recipe is super kid friendly and you can even involve them in the making process. I know I always loved getting my hands dirty when helping my mom in the kitchen.

Ingredients
  

  • 2 bags Flock Hot Chicken Chips
  • 8 sticks mozzarella string cheese
  • 1 cup almond flour
  • 1/2 cup grated parmesan cheese
  • 2 tsp oregano
  • 2 tsp basil
  • 2 tsp garlic powder
  • 1 whole egg

Marinara

  • 3 tbsp tomato sauce
  • 1/8 tsp basil
  • 1/8 tsp oregano
  • Pinch salt
  • Pinch black pepper

Instructions
 

  • In a zip lock bag, crush your chicken chips until pulverized. You could also use a food processor with a couple of pulses until it reached almond flour consistency.
  • In a medium bowl, add pulverized chicken chips, 1 cup of almond flour, ½ cup of grated parmesan cheese, 2 teaspoons of oregano, 2 teaspoons of basil, and 2 tsp of garlic powder.
  • In a small bowl, beat one egg.
  • Cut your 8 mozzarella sticks in half. Start by dipping one into the egg mixture and then coating it with the almond flour mixture. Then repeat the process one more time. Each stick will get two coats.
  • Place them in a prepared baking sheet with ½ inch spaced apart.
  • Once all sticks have been coated, place your baking tray into the freezer for at least 3 hours.
  • Preheat your oven to 350F and once heated, place your keto mozzarella sticks for 25 minutes or until slightly golden brown.

Marinara

  • In a small bowl add 3 tablespoons of tomato sauce and mix in your ⅛ teaspoon of basil, ⅛ teaspoon of oregano with a pinch of salt and pepper. Mix it well and Enjoy!

Notes

I freeze my mozzarella sticks directly in the baking sheet I'll be placing in the over for convenience. If you fin yourself without the necessary space to do so, just place them in a small plate and then transfer them to a baking pan after completely frozen.
