I could literally eat almond flour cinnamon rolls all week and I really couldn’t wait to share this recipe with you, they’re just my newest obsession!

This perfectly sweet sugar free cinnamon rolls recipe will change your life just like It changed mine.

Before I started with my keto diet, cinnamon rolls weren’t my thing. I mean, I liked them fine, but I wasn’t overly enthusiastic about them, if you know what I mean.

When I started with keto, it wasn’t just my lifestyle that changed- it was also my palate. It wasn’t like a complete do-over though.

Just a few additions to my feast-list. And one of those additions is this almond flour cinnamon roll!

When I began perfecting this treat, I justified it by convincing myself that I wasn’t just doing it for me (it started like that, though), but that I was also doing it for you guys, you guys motivate me every day.

Now that I have my blog up, I’ve challenged myself to make better desserts every single week!

And on that note, here’s a picture of this ultimately tasty, warm, fluffy, gooey, buttery, and perfectly sweetened goodness. Just looking at it makes me go all soft on the inside.

The Easiest Recipe Ever! 

You may be thinking, nah, I’m gonna pass since it looks too complicated. Don’t. It’s easier than it appears and I even made a video to prove it! (My tiktok is: sweetketolife) 

If you follow the steps I’ve outlined in the recipe card your sugar free cinnamon rolls will turn out perfect every time.

I admit, the fathead dough is a bit tricky (or sticky, to be more precise!) to handle. The secret is to handle it while it’s warm and always use a spatula.

I like popping it in the microwave through the mixing process until I add the eggs (which I do last for that same purpose)

Since we’re talking about sticky dough here, which is completely normal, by the way, don’t forget to use parchment paper when rolling it out.

Remember that your fathead dough for this almond flour cinnamon roll is different from the one you make for pizza and bagels since it’s going to be a little sweeter but it’s handled the same way.

The filling adds the extra sweetness needed to offset the mozzarella and cream cheese flavor.

When the mixing gets a bit too stiff and rough, don’t panic. It’s normal!

Sugar Free Cinnamon Roll Icing

A sugar free cinnamon roll is never complete without its sugar free cinnamon roll icing! How can we make even the icing keto, then? Easy.

Just substitute sugar with powdered monk fruit sweetener, almond milk, and whisk it with your cream cheese until you achieve that perfect consistency for drizzling.

Then, lightly drizzle the icing above your perfectly baked cinnamon rolls, and be perfectly content in your realization of the fact that you’ve made a perfect dessert. It wasn’t that difficult.

Can I store these for later?

The question is, can we store them for later, in case we get a hankering for a cinnamon roll in the middle of the night (I’m not saying this happens to me a lot, wink*), or we just crave for one suddenly while watching Netflix (not me, either!)? Well, yes, we can! We can store our sugar free cinnamon rolls in the fridge for up to a week.

This dessert is perfect with a cup of coffee or a warm glass of milk or tea. Serve it hot and watch your friends devour the whole batch if you don’t hide a couple for yourself!

You can never go wrong with these almond flour cinnamon rolls. I served it to my family and they were gone in minutes, nobody could believe they were keto!

The sugar free cinnamon roll icing is a total bonus to these already perfect rolls.

Ingredients
  

  • 3 cups shredded mozzarella cheese
  • 2 tbsp softened cream cheese
  • 2 cups almond flour
  • 1/3 cup monkfruit sweetener
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 2 whole eggs

Cinnamon Butter

  • 1/2 cup unsalted butter softened
  • 1/3 cup monkfruit sweetener
  • 1/4 tsp ground nutmeg
  • 1 Tbsp cinnamon powder

Glaze

  • 2 Tbsp cream cheese very softened
  • 1 tsp unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 2 Tbsp powdered monkfruit sweetener

Instructions
 

  • Preheat the oven at 350F.
  • In a large microwave safe bowl, add 3 cups of shredded mozzarella cheese and 2 tablespoons of softened cream cheese. Microwave for 1 minute or until completely melted.
  • Mix both cheeses, add 2 cups of almond flour, ⅓ cup of monkfruit sweetener, and 1 tsp of baking powder. Combine until well incorporated. (Place back in the microwave for 30 sec. If dough is to rough and not mixing)
  • Add ½ tsp of vanilla extract and one egg. Fully incorporate the first egg before adding the second egg then mix again.
  • Place the dough in parchment paper and cover it with another piece of parchment paper. Flatten it with a rolling pin until forming an even thickness of dough into a rectangle. Remove the top parchment paper.
  • In a small bowl, combine ½ cup of softened unsalted butter, ⅓ cup of monkfruit sweetener, ¼ tsp of ground nutmeg, and 1 tablespoon of ground cinnamon. Mix well.
  • Spread the butter mixture across your flat dough and start rolling. Do not apply pressure when rolling but make sure the dough is rolled tight in the beginning.
  • Cut the rolls into ½ inch thickness with a serrated knife (forward and back motion, never press down with the knife).
  • Grease a muffin pan and place your rolls inside each whole. Bake at 350F for 30 minutes or until golden brown.
  • In a small bowl, add 2 tablespoons of very soft cream cheese, 2 teaspoons of unsweetened almond milk, ¼ tsp of vanilla extract, and mix very well with a whisk.
  • Add 2 tablespoons of powdered monkfruit sweetener and mix until combined. Drizzle your buns and enjoy!

Notes

If the dough becomes tough during the mixing process, place in the microwave for 30 seconds and keep mixing. You can always do this until you have incorporated the eggs.
Once eggs have been incorporated, proceed with the rolling as fast as possible before the dough gets firm again.
