If you love a good roasted tomato, prepare yourself because this breakfast stuffed tomato combined all the good things about breakfast in a delicious bite! Seriously addicting!
Cut the tomato tops. Carefully scoop out the seeds and pulp with a spoon. You can run a sharp knife around the pulp to loosen it if needed.
Drizzle hollowed tomatoes all over with olive oil and spread evenly with your hands. Place them on a baking dish, cut side up. Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme.
Break each egg into a small ramekin, then slide it into a tomato. Bake for 25 minutes or until the egg whites are set. Add a pinch of salt and pepper. Then, garnish with green onions, feta cheese and serve. Enjoy!!
