Breakfast Baked Tomatoes

Ingredients
  

  • 2 tomatoes large and firm
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 2 large eggs
  • 2 tbsp feta cheese
  • 2 tbsp chopped green onions for garnish

Instructions
 

  • Preheat your oven to 375F.
  • Cut the tomato tops. Carefully scoop out the seeds and pulp with a spoon. You can run a sharp knife around the pulp to loosen it if needed.
  • Drizzle hollowed tomatoes all over with olive oil and spread evenly with your hands. Place them on a baking dish, cut side up. Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme.
  • Break each egg into a small ramekin, then slide it into a tomato. Bake for 25 minutes or until the egg whites are set. Add a pinch of salt and pepper. Then, garnish with green onions, feta cheese and serve. Enjoy!!
