Cilantro Lime Rice

  • 1 tbsp olive oil
  • 2 cups cauliflower rice
  • 1 tbsp cilantro
  • salt and pepper to taste
  • 2 tsp lime juice


  • 1 tbsp olive oil
  • 1 lb ground chicken
  • salt to taste
  • 1 tsp ground cumin
  • 1 tsp oregano, dried
  • 1/2 tsp onion powder
  • 1 tsp paprika


  • 2 large eggs
  • Salt and pepper to taste

Pico de Gallo

  • 1/4 cup diced tomatoes
  • 1/4 cup diced red bell pepper
  • 2 tbsp fresh cilantro, chopped
  • 1 tsp lime juice
  • 1/4 tsp hot sauce
  • salt and pepper to taste

Additional Toppings

  • 1/2 cup cherry tomatoes halved
  • 1 avocado sliced
  • Cilantro for garnish


  • In a large skillet over medium heat, add olive oil, ground chicken, cumin, oregano, onion powder, paprika, salt, and pepper. Mix and cook completely while stirring occasionally.
  • For the pico de gallo, in a small mixing bowl, add tomato, bell pepper, cilantro, lime juice, hot sauce, salt, and pepper. Mix it all up and set it aside.
  • For the cilantro lime cauliflower rice, in a large skillet over medium heat, add olive oil, cauliflower rice, salt, and pepper. Cook until tender for about 7 minutes stirring often. Remove from the heat and add the cilantro and lime juice. Stir and serve.
  • To assemble add 1 cup of cauliflower rice, 1 cup of ground chicken, 1 scrambled or sunny side egg, 1/4 cup of cherry tomatoes, 1/2 sliced avocado, 1/4 cup of pico de gallo, and cilantro for garnish. Enjoy!
