In fact, it can replace high-carb foods in several recipes, including the delicious mac and cheese.

Cauliflower has always been one of my favorite vegetables. It’s one of the most adaptable veggies out there.

You can add some to any recipe and it will turn out great with the right spices and sauce. But what few people know is that cauliflower is also a suitable veggie for keto.

Not only is it about as nutritious as broccoli, it also only contains about 1.5 grams of net carbs per half a cup.

Perfect, essentially for anyone on the keto diet. Now replace the dietary nightmare macaroni with the awesome crowd-favorite cauliflower to my mac and cheese recipe and we’re in business!

This cauliflower mac n cheese keto recipe also goes really well with bacon bits, chorizo, and even Italian sausage.

When I tried it with chorizo I almost fell out of my seat in pleasant surprise. I expected it to taste good, but it was even better! Chorizo made an excellent fatty meat addition to the cheese flavors!

Keto baked mac and cheese is one of the simplest keto dishes out there. It takes very little time and effort in terms of preparation. It’s quick, easy, delicious, and keto-friendly.

To be honest, I’ve been making this keto baked mac and cheese even since I started the keto diet. It’s just so convenient. You can even make it with frozen cauliflower rice. Yum! What more can you ask for, eh?

To Bake Or Not To Bake

Now, you may be asking yourself whether baking is necessary to the delicious and all-around excellent invention of the cauliflower mac n cheese keto recipe. The answer is no.

If you want a fast dinner, you can always cook the cauliflower for longer in the boiling step.

Afterwards, you can just throw them in the pot of heavenly cauliflower mac and cheese sauce, and voila! You have a delicious and healthy dinner!

However, if you have the time and the inclination to follow the recipe step by step, I assure you that you won’t be disappointed with the results.

It’s simply one of the best inventions of mankind. Definitely one for the books!

Let’s Talk Cheese

There are hundreds of types of cheese. Fortunately for us keto warriors, most of them are very low in carbs and high in fat, which makes them a great fit for our ketogenic diet.

In fact, according to Healthline, one ounce (28 grams) of cheddar cheese provides 1 gram of carbs, 6.5 grams of protein, and a good amount of calcium.

In addition, cheese is also high in saturated fat, but it hasn’t been shown to increase the risk of heart disease.

It also contains conjugated linoleic acid, which is a fat that has been linked to fat loss and improvements in body composition, an excellent help for our diet.

In my recipe, I like to use Mexican cheese. There’s nothing like a bit (or a lot, for that matter) of queso to cheer me up when I’m feeling a little down.

Mexican cheese tastes a lot like home to me, which is why I like to use it as much as possible in my cauliflower mac n cheese keto recipe.

However, if you want to replace the Mexican cheese in the list of ingredients with maybe more cheddar or cream cheese, you may also do so. It all depends on your taste buds.

Cauliflower Mac And Cheese Sauce

Since the taste of the cauliflower is dependent on the cauliflower mac and cheese sauce, here’s how you can make yours great!

Simply melt 2 tablespoons of unsalted butter in a small sauce-pan on medium heat.

Afterwards, add one cup of heavy cream and combine them.

Then, let it simmer for a while. Just before boiling, add half a cup of sharp cheddar cheese and two cups of shredded Mexican blend.

Then, mix them all until they’re melted and well-combined. Finally, add two teaspoons of salt, half a teaspoon of black pepper, one teaspoon of garlic powder, and one teaspoon of onion powder.

Once you mix all of these together, you get to have one of the best cauliflower mac and cheese sauce in the world.

I can guarantee that you will reach nirvana. Or at the very least, cheese bliss.

Ingredients
  

  • 2 heads cauliflower
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1/2 cup sharp cheddar
  • 2 cups mexican blend shredded cheese
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1/2 cup mexican cheese blend for topping

Instructions
 

  • Wash and cut 2 heads of cauliflower. Place them in boiling water for 15 minutes then turn off the heat and leave them in the water for 20 minutes.
  • Place them in a large bowl and dump the excess water. Let it cool and use your hands to break them into smaller bite size pieces.
  • Preheat the oven to 350F.
  • In a small sauce-pan on medium heat, melt 2 tablespoons of unsalted butter. Add 1 cup of heavy cream and combine. Let it simmer and just before boiling add ½ cup of sharp cheddar cheese and 2 cups of shredded mexican blend. Mix until all is melted and well combined.
  • Add 2 teaspoons of salt, ½ tsp of black pepper, 2 tsp of garlic powder, and 2 tsp of onion powder. Mix it well.
  • Add the cauliflower to a baking dish and pour over the cheese sauce. Mix it well then add more Mexican cheese blend on top.
  • Bake for 35-40 minutes. Enjoy!
