I’ve been wanting to make some sort of keto cheesecake dessert for a long, long time. Though I always put it off, since making cheese cake always felt so intimidating.
Well rewind to last weekend, and my boyfriend decided to make a very specific low carb request, keto cheesecake bars! Although I wasn’t 100% sure how to proceed, I couldn’t turn down the challenge, so I got to researching.
After making these keto cheesecake squares I realized just how fast and easy it is to make cheesecake! Here’s all the ingredients it takes:

Crust
- 1 1/2 cups almond flour
- 2 tbsp monkfruit sweetener
- 2 oz cream cheese, softened
- 3 tbsp unsalted butter, softened
- 1 tsp vanilla extract
Filling
- 12 oz cream cheese, softened
- 2 eggs
- 1/4 cup heavy cream
- 1/4 cup Monkfruit sweetener
- 1 tsp vanilla extract
- 2 tbsp peanut butter
