There are many chaffle recipes with almond flour on the internet but this almond flour chaffle is by far my favorite!

As you know, I’ve always prided myself in creating recipes that are easy to follow and make, delicious and low carb– quite simply the dream team in any cookbook or food blog!

It’s one thing to tell people that something is easy to make, and quite another thing to make it actually easy to make.

I belong to the latter group. And this chaffle recipe with almond flour proves just that!

Pizza has been the American staple for longer than I can remember. It’s the go to food for take out, dine in and anything in between.

I don’t know anyone– not one single soul– who doesn’t like pizza!

I mean, if you’ve tasted one, it’s safe to assume you liked it and have eaten more than your fair share over the years since that one, stimulating and absolutely addictive bite.

What is a keto chaffle compared to the OG New York Pizza? For one, it’s not as unhealthy, nor quite as big, but it’s every bit as delicious!

My keto chaffle recipe with almond flour does molds out of mini waffle makers (tiny), but it kicks the same as regular pizza goodness (but fierce!).

What is a Keto Chaffle?

“What is a keto chaffle?” seems to be a question I have been asked loads of times.

My keto chaffles are waffles mainly made of eggs and cheese (and almond flour, of course!).

When I was writing this recipe, I thought about adding something else into the mix to make it more– I don’t know exactly.

But then I thought, why fix something that isn’t broken? I mean, it’s very hard to attempt to improve on perfection, and my keto chaffles were already perfected long before I wrote this post.

That is to say, the cheese gives the chaffle this crunchy texture that just makes you want to have one quick bite after another, until it disappears completely down your tummy.

That’s why chaffle recipes with almond flour have become a favorite and are blowing up!

I mean, I’ve made it so delicious that my keto pizza chaffles have been made an honorary member of my family– present in all occasions.

Or maybe a table, or chair, or my waffle maker– a regular fixture in my household.

Toppings for Days! 

You know what the best part is? It’s not even the fact that the chaffle crust is to die for– it’s the fact that you can add your own delicious toppings and customize it to your liking.

Or not. It’s solely up to you! Personally, I’m all for the classic pepperoni. But if you want to engage your creative spirit in this high road of culinary experience, you can add other stuff in!

You can make it loaded or light– put in Italian sausage, asparagus, pesto sauce, artichoke, spinach, arugula, tomato, green pepper, mushroom, shrimps, crabs, lobster, one whole chicken– seriously, it’s all up to you!

Keep it Salty

The holidays have brought us so much dessert it’s a wonder we haven’t choked on the sweetness overload.

Luckily, thanks to keto, we can now create and make our desserts both yummy and healthy!

2020 didn’t bring us a lot of good things (understatement!), however, that doesn’t mean the good things shouldn’t be celebrated.

Whenever things get to be too much, my chaffles are a reminder that there is something good left in the world.

That, it’s good to take breaks from the bad. I understand that we need to wade in the muck to clean up and to bring about the change we all deserve, but, it’s always, always a good idea to sigh, rest and eat deliciously bracing food, especially in times like these.

Equipment

  • waffle maker

Ingredients
  

  • 1 large egg
  • 1 tbsp almond flour
  • 1/4 cup mexican cheese
  • 1/2 cup mozzarella shredded
  • 1 tbsp parmesan
  • 1/8 tsp Italian seasoning
  • 1/8 tsp garlic powder
  • 1 tbsp tomato sauce
  • Pepperoni

Instructions
 

  • Preheat the oven at 400°F and turn on your waffle maker.
  • In a small bowl, mix in 1 large egg, 1 tbsp of almond flour, 1/2 cup of shredded mozzarella, 1 tbsp of grated parmesan, 1/8 tsp of Italian seasoning, and 1/8 tsp of garlic powder.
  • Add nonstick spray and sprinkle 2 tbsp of Mexican cheese on the hot waffle maker before placing the batter.
  • Add the batter and sprinkle the remaining Mexican cheese before closing the lid. Cook until the automatic timer or light goes off.
  • Place it on top of a prepared baking pan and spread 1 tbsp of tomato sauce evenly through the top of the chaffle.
  • Add your choice of toppings (I used mozzarella and pepperoni) and bake for 8 minutes. Enjoy!
