Obsession With A Capital O

Tiramisu is one of those desserts I didn’t get to try growing up. We didn’t have this on the island. And when I got to New York, well, let’s just say it’s not the greatest city in the world for nothing.

It gave me so much, so soon. I was almost overwhelmed. If I wasn’t fast on my feet, I would’ve been.

It also introduced me to tiramisu. This Italian classic dessert has made me addicted to mascarpone cream. I loved it so much that I went to Little Italy a lot (like a lot!) when I was in College, just to eat this!

I’m a little ashamed to admit that I lost it a bit when I realized keto meant no more tiramisu.

Even though I live minutes away from Little Italy, I couldn’t visit the restaurants and eat my tiramisu anymore.
So I did what I do best.

I thought of a solution, instead of wallowing in the problem.

After some time of resisting the urge to go to the store and get a piece of heaven I decided to make my own tiramisu sugar free recipe. And boy, did it pay off.

Amazing Celebration Cake

My boyfriend’s dad wanted to eat tiramisu. That was the beginning of the dilemma.

However, his dad was in keto and, as you know, it’s pretty much impossible to buy him a tiramisu that wouldn’t take him out of ketosis. And then I thought, ding!*

Fathers’ Day was coming up, so it made me pretty much committed to the deed. I was so excited to start the experimentation process.

From different keto lady finger recipes to the consistency of the mascarpone custard cream, it all needed to be perfect.

Since it was a celebration, I made my boyfriend’s dad a beautiful and absolutely heavenly keto tiramisu layer cake with my tiramisu sugar free recipe. And it was so good, everyone was asking for seconds!

I floated off the high from that for a couple of weeks. It was such a success. All my hard work paid off.

It feels great for someone to appreciate your cooking and that day was such an accomplishment.

So yes, if you want to impress a tiramisu lover, my keto tiramisu recipes are the way to go.

I understand that you feel a little bit intimidated by the steps but I can guarantee your success if you make my keto coffee dessert following the very detailed steps below. It’s simply too good to fail.

Almond Flour Ladyfingers

Once I decided on my alternatives, everything was smooth sailing from there. The trick is to stick with whichever substitutes you are most familiar and comfortable with.

That is not to say that you must use them all the time, for all your recipes.

It just means that once you have tried and eliminated the other competition, then you should go back to using your favorites.

They’re your favorites for a reason. This is the case with my use of almond flour for the ladyfingers.

Before I settled on using it, I had to make sure I wasn’t being shortsighted, so I had to try making it with coconut flour and other sugar substitutes.

Let me just say that it’s still almond flour and monkfruit for me. Which is a good thing. Clearly I made the right choice.

If you saw their reactions when they first tasted my keto coffee dessert, you wouldn’t doubt me and these keto tiramisu recipes.

And if you tasted my tiramisu cake made with these keto tiramisu recipes? Ha. You’ll just have to take my word for it.

Or maybe not. You know what? Don’t take my word for it. Try it for yourself. See if it doesn’t make everyone fall in love with you.

Even with the pandemic, it’s not that hard to find something to be thankful about, or something worth celebrating.

Yes, the pandemic has imposed many restrictions. But our happiness doesn’t just come from all those that we cannot do or go to at this time.

We have enough power to make our own happiness. There is honestly nothing more powerful than a person who is able to choose to be happy instead of miserable.

You can do this too. Try your hand with my keto tiramisu recipes.

Almond Cake (Keto Lady Finger)

  • 2 tbsp unsalted butter (for greasing the baking pan)
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 6 large eggs
  • 3 tbsp monkfruit sweetener
  • 1/2 tsp sugar free vanilla extract
  • 1/2 tsp almond extract
  • 1/4 tsp cream of tartar

Mascarpone Custard

  • 6 egg yolks
  • 1/3 cup powdered monkfruit sweetener
  • 8 oz mascarpone cheese
  • 1 cup heavy or whipping cream
  • 1 tsp vanilla extract
  • 1/4 cup strong coffee or expresso brewed
  • 1-2 tbsp rum or brandy
  • 1 tbsp unflavored powdered gelatin

Chocolate Pudding

  • 1 pkg Simply Delish instant chocolate pudding

Almond Cake (keto Lady Finger)

  • Grease a 6 inch round pan with butter. Line with parchment paper and grease with butter again. Preheat the oven to 350° F.
  • Combine the almond flour, baking powder and salt.
  • Separate the eggs. With an electric mixer, beat the yolks and sweeteners until thick and lemon colored. Beat in the vanilla, almond extract and cream of tartar. Fold in the almond flour.
  • With a clean bowl and beaters, beat the egg whites to firm peaks. Stir 1/4 into the almond mixture. Fold in 1/2 of the remaining whites until barely combined and then the remaining 1/2 until thoroughly combined. Spread evenly into the prepared pan.
  • Bake for 25-30 minutes until the top is light brown. Let cool.

Mascarpone Custard

  • In a small mixing bowl, beat egg yolks, monkfruit sweetener until thick and lemon colored.
  • Place mixture on top of a double boiler over boiling water. Reduce the heat to low. Cook for 8-10 minutes, stirring constantly. Remove from heat. Add mascarpone cheese and powder gelatin, beating well.
  • In a small mixing bowl, beat heavy or whipping cream until stiff peaks form. Fold into egg yolk mixture. Add vanilla and or coffee extract if desired. Set aside.

Chocolate Pudding

  • Follow the instructions listed on your Simply Delish package.

  • Slice the almond cake into 3 equal layers.
  • Combine the rum and espresso in a small bowl.
  • Spread a small amount of mascarpone mixture onto the cake base.
  • Using a brush, lightly coat the cake layers with the espresso mix being careful not to get them too wet. If it’s too wet the cake won’t be stable.
  • Place the first layer on top of the small amount of mascarpone mixture and pipe a border around the top of your cake.
  • Fill in the center with your Simply Delish chocolate pudding and spread evenly, repeat the process.
  • Coat the cake with the rest of the mascarpone mixture. If it's too runny, place in the fridge for 15 minutes and then coat the cake.
  • Sift cocoa powder on the top to finish.
  • Cover and refrigerate overnight or at least 5 hrs.

Mascarpone cheese can curdle with a temperature change. The whipped cream and mascarpone mixture can be chilled in the freezer before folding together to prevent any curdling.
