Mix in the sour cream, unsweetened almond mil and vanilla extract.
Once all the wet ingredients are well combined, whisk in the monkfruit sweetener, almond flour and salt. Whisk until the batter is smooth.
Prepare a skillet on medium heat. Butter or oil spray very minimally.
Pour or scoop your crepe batter on to the skillet. Once the batter hits the skillet, lift it and do circular motions until the batter forms a round shape. Place back on the stove and wait until it's cooked through before turning it over.
Once cooked on both sides, place aside and repeat the process until all your crepes are cooked. Enjoy!
If your batter is lumpy you can put in a blender for a couple of seconds.
